Guilt-free apple tarts (sugar free & vegan)

My boyfriend loves to eat apple pie. But… I don’t use eggs and refined sugar in my dishes... So I started experimenting to make guilt-free apple tarts, resulting in this recipe. These little apple tarts have been approved by the both of us. They are delicious with a cup of tea or present them as dessert.

I hope you enjoy these apple tarts: from the making to sharing and eating them.

Organic ingredients (for 6 mini appel tarts)

Bottom:

  • 100 gram mixed nuts (for example pecan, hazel and cashew)
  • 40 gram oatmeal
  • 4 to 5 fresh medjoul dates (without pit)
  • 15 gram coconut oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla powder (unsweetened)
  • pinch of himalaya salt

Filling:

  • 1/2 apple (or 1 mini apple)
  • 40 gram raisins
  • 1 teaspoon cinnamon

Other:

  • Muffin tin (6 molds greased with a little coconut oil)
  • Mixer (chopper, food processor, or (hand)blender

Preparation

  • Soak age raisins in warm water (for minimal 10 minutes).
  • Preheat the oven to 180ºC.
  • Chop or grind the nuts a little bit (for example with chopper).
  • Mix the nuts, oatmeal, dates, coconut oil, vanilla powder, 1 teaspoon of cinnamon and the pinch of Himalaya salt in the mixer until it becomes a sticky substance.
  • Divide the dough into 6 molds: cover the bottom and edges to make cups.
  • Peel the apple and cut the apple into small pieces (smaller than with regular apple pie as it is put in the muffin tins).
  • Mix the apple pieces, drained raisins and cinnamon with a spoon.
  • Fill the muffin tins with the apple filling.
  • Bake the mini apple tarts for +/- 20 minutes in the oven.
  • Let the apple tarts cool down before removing them from the muffin tin.
